What it brings to your cooking
Highly aromatic, woody, slightly smoky and almost meaty.
- Scientific name
- Morchella spp.
- Texture

- Origin
- Europe and North America
Where it grows
Limestone soils, woodland edges, orchards and recently disturbed or burnt ground, mainly in spring.
Choose and prepare it well
Split lengthwise, shake and briefly rinse the cavities; dry carefully.
- Choose firm specimens without slimy areas or unusual smells. For wild species, use only batches checked by a competent inspection service.
- Clean with a brush or damp cloth. If soil persists, a very brief rinse is possible, but dry immediately: waterlogged mushrooms brown poorly.
- Separate parts that cook at different rates and cut even pieces. Prepare the pan before cutting the most fragile species.
- Cavities
- small cavities in a morel cap where sand and debris may remain.
- Sweat
- cook gently without browning to release moisture and soften food.
- Reduce
- evaporate some liquid to concentrate flavour and thicken sauce.
- Cap
- the top and usually widest part of a mushroom.
- Stem
- the part supporting the cap; its base may be earthy or tough.
- Sear
- cook quickly on a very hot surface to brown the outside without boiling food in its moisture.
The best way to cook it
Always cook thoroughly, ideally for 10 to 15 minutes; excellent with cream or vin jaune.
AvoidNever raw or merely seared for a few minutes: thorough cooking is essential.
